I’m not sure how GF panko would work, and I’m not sure I could even find GF matzo meal, so likely no more latkes until I’m ready to experiment again—Thanksgiving was rough but ultimately successful. I’m assuming I can sub duck fat for the chicken fat? Duck fat seems easier to come by where I live.
I just found some chicken fat from my chicken shop haha and rendered it.
worth it.
And, leeks and chives are also wonderful in the latkes.
Unless Alison has caused a run on leeks, making them difficult to find….
