Growing up in a half Spanish household, we ate tortilla all the time! Sometimes, when pressed for time, my mom skipped the frying potatoes step by using high quality potato chips instead and just doing a quick pan cook for the onions. Took less time and still turned out great 👍

Hello! I just upgraded so I can ask this question: how long will this keep, and what would be the best way to store? Is it freezable? It is only me, I suppose I could make a smaller version. You have perhaps also covered this in the video, which I haven't got to yet.

Happy to have you! I definitely would not freeze it— I will tell you from personal experience one person can definitely eat a whole one of these over 3-4 days haha. I keep in the fridge, wrapped!

Shelskys or Fish Tales in BK, Russ and Daughters in the city, sometimes Whole Foods even has! For salmon roe/ikura, Sunrise Mart has as well

Besties, do not, I repeat do not use 7 eggs and an 8 inch pan. I had slight overflow. I am making this late at night. I will report back on flavor. I used a cuisinart stainless steel pan and it broke apart on the flip, but I will report back on flavor. Whole Foods in nyc has salmon roe but not trout roe, at least not in my neighborhood. Next time I would use six eggs.

I used 7 eggs the next day in mine and it was great (just a little thicker and needed some more time to cook)- could be shape of skillet/size of eggs/thickness of potatoes! It definitely works, but as I mentioned each one is very different so just trust yourself (feel feee to hold back some mixture if you aren’t sure)

Flavor review: I reheated it the next morning in the microwave. It’s custardy and rich. Good, even flavor. Ate it with a white sesame seed & cucumber salad first and I think that balanced the richness a little bit.

I made did tonight and it was delicious! My tortilla broke when I tried to slide it back into the pan, but I also used a plate that had a lip thar was too high (a mistake in hindsight, didn't think of it at the time). Anyway, the leftover oil, would you recommend putting it in the refrigerator once it's cooled?!

Ah yeah, the lip! Will get you every time. A lid to a pot or pan will also work well (flat!). Refrigerate the oil if it’s going to be used later than a day or two

I used pre-peeled, pre-cooked, pre-sliced potatoes from the grocery store so I skipped the cooking in oil part and it worked! (I have an excuse - newborn and toddler🤡)
