I’ve done a lot of them both “regular” and gluten free, and always use the King Arthur rand gf all purpose. Anything short-bready or non-yeast/ doesn’t require rise/proofing works well! Salted Lemon shortbread, Tomato Tart and Blueberry crumble you can’t even tell the difference
