I made the lemon cream pie and it was unfortunately a bit of a disaster. The filling swelled during the bake, it browned but was still very jiggly, then it split. It still tasted ok, but any ideas what went wrong? I used a stand mixer instead of whisking by hand. Maybe too much mixing?
