Hi Lindsay, you can also make a non-dairy buttermilk with almond milk and lemon juice, let it sit for 5 mins (same as you would with milk + lemon juice). I’ve done this in a lot of baking for my dairy allergic friends (Bad Manners uses this a lot in it’s vegan bakes).
