Hey Alison!!!!! I am cooking your way through your cookbook and we are LOVING IT!!! I have a question about the simple fruit tart though. Is the standarized height of a tart pan 1 inch or are you using a taller one? The crust was a bit thick (still beautiful) and I made the pastry cream on page 158 and I only used 1/2 of it. Do you have any tips or thoughts on that? Thank you!!!
