if the crust was too dry i would say maybe the cookies werent ground enough? i make this pie pretty regularly and never need more butter, but that could be my preference. the crust shouldn't ever feel "wet," just bound.
as for the filling-- it will still be jiggly out of the oven! it shouldn't be totally set until it's chilled in the frid…
