Her Passover recipe is good, but honestly, without a smoker, I think you’re better off just doing short ribs - they are so much more forgiving and if you’re gonna spend that much time and money, there’s so much more margin for error.
I smoke brisket a lot, and the quality of the meat is a MASSIVE variable. If it’s not prime grade, it can easily dry out.
