gin fizz is a great idea, or pisco sour. otherwise...pavlova?! I just made one recently and surprised myself at how much i enjoyed it. feels like a good once-a-year dessert. egg whites also freeze beautifully, so you can always stock up until you have enough for, say, a fritatta (I like egg white fritattas, sue me!)
