Hi Alison. I've made your Simple Fruit Tart with Vanilla Pastry Cream a few times and it never really sets up for me. Last Easter, it spilled all over. It thickened (but maybe not enough?) Am I not cooking the cream long enough? Are there high altitude considerations? Any suggestions would be greatly appreciated! I really want to make it work!
