This also just happened to me!! I used a 5.5 Qt dutch oven and put them in for 12 hours with the slow-roasted lamb and they came out very crunchy and burnt on both the top and bottom with a thin layer of perfect chickpeas in between. Pretty sure I had 2 inches of water above the chickpea line as directed.
