Something I’ve done with corn that i loved, was grilling it then removing from the cob and pureeing with toasted walnuts sage and olive oil, it almost has like a tahini or nut butter consistency— I’ve used it as a sauce for pasta with clams, as a dip for a bunch of veg, would probably be a good soup base too
