Alison, you offer cornstarch as an alternative to flour for gravy. Have you ever tried potato flakes instead? I’ve read they can be a good thickener, and Bob’s Red Mill makes them, so it’s not like I’d be using any hyperprocessed potato. Anyway I’ve never tried it, curious. Thanks!

Never tried it! Worth an experiment but maybe not with the precious turkey stock
