I honestly have no idea why it didn't work, and truly wish I did. If you use a dutch oven and are sure youre oven isn't running hot, then I can't imagine what it could be. A thin pot could be the culprit for sure (i.e. wouldn't use a dansk kobenstyle or thin enamel pot..).
