I made the pumpkin pie today. I was low on heavy cream so I supplemented with sour cream (1/2 cup heavy cream, 1/4 cup sour cream) and it was lovely and added a little bit of a tang. My crust came out a little weird, though. It tastes really good but came out sort of chewy. Maybe I used too much brown sugar?

I used about 1 1/2 - 2 tbsp brown sugar. I also used Mi Del ginger snaps. IтАЩm just realizing theyтАЩre the gluten free kind (I just grabbed what my store had; IтАЩm not specifically gluten-free). TheyтАЩre sort of cookie-like and not as flat as the ones you used in the Home Movie. Maybe thatтАЩs part of it, too. The chewy texture sort of makes the crust feel like toffee or caramel. It tastes good but is a little odd for a crust!
Thickness wonтАЩt matter, but gluten-free definitely would I imagineтАФ havenтАЩt tested with GF cookies! Maybe they donтАЩt need any additional sugar at all. Hope that helps!
