Hi! Hoping someone who has made this before sees this! I’ve been eyeing this for dinner and have all the ingredients for the whole chicken version, but there’s only two of us so we usually like to use roast chicken leftovers throughout the week - are the leftovers of this dish fairly versatile?

I think they’re super versatile! Pick the meat and use like you would any other chicken. The flavor profile goes along nicely with most things 😇
