I used to have a coworker who made the best charoset I’d ever tasted, but the recipe was only to be shared within the family. I never have and never will guard recipes; I love to share food, recipes and cooking tips.

I used to have a coworker who made the best charoset I’d ever tasted, but the recipe was only to be shared within the family. I never have and never will guard recipes; I love to share food, recipes and cooking tips.
She said that it’s uniqueness was because she got it from the Sephardic side of her family. The only information she gave me was that one of the ingredients was Pippin apples (no other variety would do) and that there was no wine included.
Joan Nathan has recipes for Haroset from many different communities. Check her out. Pippin apples sound British to me, so maybe look for a British Sephardic haroset?
I've made it but never with a recipe. I always go with a tart apple, walnuts, dried figs, dried cherries, black pepper, cinnamon (and salt, sorry). To eliminate the need for wine, I go with very juicy apples. I've also tried to soak the dried fruit in water and use that liquid in lieu of wine, but find that a little fussy.
