I would point you to gluten-free baking blogs who have a good handle on this-- ive done cup 4 cup and bob's red mill (both have different dominate ingredients which change their flavor and effectiveness)-- hoping someone else on this thread can pop in with better advice than me! but whatever you do-- DON'T abandon all hope!
