I absolutely suggest cauliflower galette. It’s insanely delicious and doesn’t feel “vegetarian,” just…really wonderful. Make a big salad with it, something like raw and roasted fennel/carrots from dining in or another vegetable-heavy type, plus some dressed casual herb salad. Very good meal.
