Would a large outdoor propane griddle suffice for this recipe? My husband just surprised me with one yesterday and I'm itching to find fun recipes to cook on it. Happy early birthday, hope you have a fabulous day!
technically, any cooked chicken will be good here haha, but just know the grilling instructions won’t really translate— your griddle will cook more like a large outdoor skillet (which is great! just not a grill).
I was wonder this too, about cooking bone in chicken on a blackstone. You'd have to close the lid to make it like an oven for a portion of the cooking. I haven't tried it, but I also have a weber, which makes more sense to me.
Tbh I'd be open to using just boneless chicken and adjusting the cook time, if it's tricky to do bone-in. My husband doesn't like bone-in meat anyways, I end up having to carve it off before it's considered finished lol.
I'm with you. I love my Weber Kettle BBQ and charcoal! I had a gas grill for years until it broke and I got the Weber. It's what I learned to barbecue on.

OMG, OMG we have the same birthday! A bittersweet day not summer not fall. Yay! So this sounds perfect on Sunday for the gang (but not for my new 6-week old grandson, even pureed, but maybe for his 2 year old brother)! Bone in-skin on thighs are my fave, and I get to dictate, dammit! And I have to use my Weber electric grill since I live in a condo, but it does surprisingly well! Happy Birthday!

My bro is flying East from the CA West Coast, and I am making dinner for us on Thursday night. He loves a whole roasted chicken (we do your buttered tomato and oregano chicken together a lot), so I’m excited to try making this for him with all the fresh herbs and lettuces and Vietnamese-ish style. Yay! Wish me luck; it will be my first solo “real” (outdoor, gas) grill experience.
Re: jalapeños, a friend who is an amazing home cook (she gifted me Dining In, which was my first introduction to you) said she read that growers and supermarkets were breeding the spice out of jalapeños. Wondering if you have heard this too? Any truth there? (I know they can vary in spice level, but most of mine lately, as you said in this newsletter, are closer to plain or a slightly zippy green pepper).
I can report that it was wonderful on shrimp, and the leftover sauce was perhaps even better (if that’s possible) on seared scallops with all the salad-y things on the side
Had major pepper mill envy after watching the latest episode of HM and went online to buy it only to learn that it's been out of stock for a while. Do you have a recommendation for a similar one (our Peugeot drives us crazy!)? Thanks, and happy birthday to a fellow Virgo!
