I had Danish Blue cheese in the house and made a salad with it, wondering what I was going to do with the rest of it. This morning I read your description and recipe for the blue cheese dressing.

I made that as well as another one (just for fun) , a dip, and now we are awash in a blue cheese dip and dressing. I tasted along the way so I know how good they are. The bonus is that there is still about a third of a cup of blue cheese 'crumbles', which will probably end up on a salad with bacon. Yum.
