Five minutes after watching this I was in the market searching frantically for pea shoots. No luck. But I subbed with spinach and added some sliced baby Bok Choy I had laying around.

That’s a lie.

I bought the baby bok because because I was afraid it wouldn’t be filling enough and because this is MY soup story. (As if a single baby Bok Choy was gonna turn this into a belly-busting knife and fork event.) I did use chicken broth instead of water. Not that I don’t trust AR with my life, but I did it and I’m glad I did.

We also popped a can of those crunchy little La Choy canned chow mein noodles and tossed them into our bowls. I am not ashamed! Because even though we’re eating a hip Pho-ish soup for dinner, we’re not really very high on the hipster chart anymore.

It was delicious! The garlic crunchies are a must, we added some baby corn ears, too, and I looooved the tiny little pops of flavor from the cilantro stems. Another winner. Thanks AR, we loved it!

I haven't received anything from "a newsletter" since this one. Have you stopped publishing? Moved to another platform? Run of to Tahiti with the man of your dreams? Wassup?

I’ve made 2 of the 2 Roman pork noodle soups and they are truly (not exaggerated) life altering.

I trekked back to Suburban Chicago this weekend. Made this soup for my family. It was transformative. My mom asked if I had someone in my life that introduced this to me. I said yes, because in a way - it was true.

Make this pea shoots or nah (as tantalizing and captivating as they appear in YT, the hollow, wiltable GOATed soup veg?!) - I used a mixture of bulk spinach and purple baby kale. It’s amazing.
