I am team mashed potatoes multiple times per month. I live alone and often have them as a side. Honestly, I think they’re less work and time than the roasted potatoes I make, which involve parboiling potatoes, drying the pan and shaking them up, then roasting for a good long time. Maybe it’s just easier to make a mash for one? Sometimes I just use a potato masher, but I often use a ricer. I like my potatoes as simple as possible—lots of butter, some half and half, salt and a ton of fresh pepper. No garlic, herbs, or chives.
Oh, and I’m starting my turkey stock tonight. Even though I’ll be cooking for one that night (long story, sick dog, too much to travel), I’ll be doing the whole spread, except I’ll just do a turkey breast and I’ll skip the sweet potatoes, which I don’t care for. I always make a light, crunchy, citrusy shaved salad, though!
