Besties, do not, I repeat do not use 7 eggs and an 8 inch pan. I had slight overflow. I am making this late at night. I will report back on flavor. I used a cuisinart stainless steel pan and it broke apart on the flip, but I will report back on flavor. Whole Foods in nyc has salmon roe but not trout roe, at least not in my neighborhood. Next time I would use six eggs.

I used 7 eggs the next day in mine and it was great (just a little thicker and needed some more time to cook)- could be shape of skillet/size of eggs/thickness of potatoes! It definitely works, but as I mentioned each one is very different so just trust yourself (feel feee to hold back some mixture if you arenтАЩt sure)

Flavor review: I reheated it the next morning in the microwave. ItтАЩs custardy and rich. Good, even flavor. Ate it with a white sesame seed & cucumber salad first and I think that balanced the richness a little bit.
