One of the reasons I love your recipes is your disdain for mayo except in tuna salad! I am literally the same.

One tip I got from my stepdad is to really dry the tuna. I guess if you are getting fancy tunas you might want more of the oil or flavour of what it is packed in, but if you are getting "regular tuna" in water, after draining the open can, I will put the whole bunch of tuna into paper towels or tea towels and press the heck out if it until the paper is dry.

This makes for tuna that is much better able to receive a lot of ingredients (like all the little nibbles that we love so much) or added liquid like lemon juice. In a salad-salad it matters less but on a sandwich it keeps it from being runny or wet. Mmmmmm I can't wait to make your recipe here!
