Have you tried Kewpie mayonnaise? I like mayonnaise and use it often. To my taste, Kewpie is the best commercial mayonnaise I’ve had.

I have a dumb question about jars of capers I've been meaning to ask you. Do you put water back in it after you use some? I can't get any capers out without dumping all the liquid out of the jar, but I don't always use all of the capers. I assume adding water and putting the jar in the fridge is okay.

I strain with a tea strainer and put the liquid back. Those little jars are a pain.

One of the reasons I love your recipes is your disdain for mayo except in tuna salad! I am literally the same.

One tip I got from my stepdad is to really dry the tuna. I guess if you are getting fancy tunas you might want more of the oil or flavour of what it is packed in, but if you are getting "regular tuna" in water, after draining the open can, I will put the whole bunch of tuna into paper towels or tea towels and press the heck out if it until the paper is dry.

This makes for tuna that is much better able to receive a lot of ingredients (like all the little nibbles that we love so much) or added liquid like lemon juice. In a salad-salad it matters less but on a sandwich it keeps it from being runny or wet. Mmmmmm I can't wait to make your recipe here!
