I used a waxy-skin potato (fingerling) so I didn't peel them- the texture is nice. If I were using something with tough skin like russets, I'd peel them. :) Happy soup making

Making this now, experimenting with cauliflower instead of potatoes, cause hubs is on a diet. I'm sure it will still be tasty. You had me at dill!
