Can I make this and keep it as leftovers for a few days? I cook solo and like to get a few meals out of my prep time.

I do this all the time. At least with the book version. Maybe leave the herbs out until serving to keep them L.S.C.

Agree with Nellie, and would like to add: the recipe is easily halved (I do this all the time with the Nothing Fancy version of the recipe.)
