I've done your Apple Honey version once back during the holiday season but used a small enameled pot since I didn't have a rimmed baking sheet nor a spring form pan. Having since procured a spring form pan just last week, I will give this another go. I think I'll do it with Huckleberries since they are in season here in MT and available for the taking when mountain biking. Fingers crossed it works!

I'm sure this is a stupid question but do you use all the pie dough or just one disc for the galette?

Is there any chance of including weights for ingredients in your recipes? I have no idea what a stick of butter is as butter, where I live, is in metric units (500 gms). Similarly, I prefer to use weights for measuring flour, especially with baking, to ensure correct ratios. It would certainly make a difference for me and probably increase the likelihood of success with your recipes.

Hi Alison! I just made this pie crust and before I even put the water/vinegar mixture in, it was all so easily mixed. I've made pie crusts before, but that was before I moved to a tropical climate. Is it possible that the butter just melted too quickly as I was working it? I triple checked my measurements, so that shouldn't be it. Should I grate it with a grater so it doesn't get any additional heat from my hands? Help! Any advice to make this in a warm and humid environment?
