Hi Alison! I have a question about anchovies.... I bought them in a small jar and after I opened them I have been keeping them in the fridge, but due to the oil it gets all congealed. Is it necessary to refrigerate them or can I just keep them in the pantry after they have been opened? BTW I LOVE YOU and you are my hero.

haha HI thank you! no, the oil will liquify at room temperature- don't worry about the congealing! that's how they're meant to be stored.

Hi Alison!! I love each and every pudding recipe of yours I’ve tried (banana cream pudding, vanilla pastry cream) and I can’t wait to try this one. Which brings me to a little vent/question.

Just welcomed my first baby in July and whereas she truly is the light of my life, her GI tract absolutely FREAKS when I have dairy or garlic. I truly feel like omitting dairy and garlic from my diet is the biggest sacrifice I’ve ever made and I was just wondering, what would you eat if that were the case (which I truly hope it won’t be for you)?? I find it’s relatively easy to omit garlic but dairy is HARD. In my desperation I’ve turned to chatgpt to give me meal ideas but it keeps recommending stuffed peppers which I simply refuse to ever make.

i find the end pudding to be a touch sweet when using anything but bittersweet- so id recommend cutting the sugar back by 1-2 tablespoons.

This sounds divine.

Having said that (forgive me, Alison)—Maldon also makes a smoked salt. If smoked salt caramels are a yummy thing, perhaps smoked salt on this would be good also? Whatever, I will be making this recipe. Whether or not I share (you did say it was good up to 5 days), is up for debate.

Thank you for singing the praises of this recipe— I can confirm the flavor is delightful. I made this for Thanksgiving and the texture was akin to mousse, though not quite as smooth. Any idea where I went wrong???

hmmm meaning it was stiffer than pudding? not sure what you mean by mousse (since i think of mousse as light and fluffy, which would be very hard to achieve here, though not unpleasant!)

Ooo yes stiffer than pudding. It was more airy > silky. Congealed a bit more than I expected. Does that make sense?

yes-- could have been more cooked in the pot to begin with? also, i recommend whisking the set pudding before serving which will usually always return it to silky glory.

Great tips. I think I had it on the stove too long pre- and post- egg yolk mixture, and I did not rewhip before serving. Will give it another go!
